The OG COWS Cask is our long-term project with North Point Distillery. Filled on 30 September 2024 with Dalclagie new-make spirit, it began its maturation in a first-fill Palo Cortado sherry cask.
This is a chance to follow a spirit from the beginning: to see what time, wood, and patient attention will bring to the glass.
A cask with a future.
The plan is to mature the spirit for roughly eight to twelve years, with a tawny-port finish later in its journey. That is a plan for the cask, rather than a fixed bottling date.
For now, the story is still being written in the wood.
